Fig and Crispy Prosciutto Poached Egg Sandwiches

No need to sleep in on Sunday when you have these Fig and Crispy Prosciutto Poached Egg Sandwiches to wake up to. Bonus points if you can get your man to make it breakfast in bed.

INGREDIENTS:

  • 2 pieces of your favorite hearty nut or fruit loaf, toasted
  • 2 poached eggs
  • Fig jam
  • Goat cheese
  • 4 slices Prosciutto, crisped*
  • Frisée
  • Parmesan Cheese

DIRECTIONS:

Assemble sandwiches by spreading the fig jam on toast. Top with a layer of goat cheese then add the crispy prosciutto. Top the prosciutto with the frisée then add poached egg. Garnish with grated parmesan. Serve with fresh fruit.

*To crisp your Prosciutto, place 4 slices on a plate between paper towels and microwave on high for 1-2 minutes until crispy.
